Pirarucu recipe in coat

Pirarucu à casaca, or pirarucu de casaca, is a typical recipe from the Amazon, with strong influences from indigenous cuisine. It is a fish dish prepared with the so-called 'Amazon cod' shredded and mixed with various ingredients, such as uarini ova flour, coconut milk, banana and much more, which makes for a complete meal. Ingredients for making Pirarucu in the jacket:

 1 kg of dried and soaked pirarucu

 500 grams of Uarini flour/sheep water flour

 300 milliliters of coconut milk

 1 cup of cooked vegetables

 ½ cup chopped green olive

 ½ cup of olive oil

 1 unit of white onion

 1 unit of green or red pepper

 1 unit of tomato

 1 pack of scent-green

 4 units of pacovan banana

 4 units of egg

 1 packet of straw potatoes

 frying oil

 Black pepper

 salt

How to make Pirarucu in a coat:

To prepare this Amazon recipe, you need to gather the ingredients. It will be a little difficult to find pirarucu and uarini manidoca flour / ovinha water flour (the one in the image) outside the Amazon, as these are typical ingredients, but the pacovan banana will be easy, it is known as plantain in other states.

The first step is to cook the fish: place the desalted pirarucu in a greased baking dish, cover with a little oil, and bake for 20-30 minutes in a preheated oven at 200ºC. Then remove, let cool a little and shred into splinters.

Meanwhile, put the flour and 200ml coconut milk in a bowl, and set aside to moisturize the flour (no need to cook, just moisturize, just like Moroccan couscous).

Also take the opportunity to boil the eggs and fry the banana, cut lengthwise into strips, in hot oil.

With the fish ready, prepare a stew with the oil, onion, tomato or pepper, finely chopped. When these ingredients are soft, add the fish and let it cook for 1-2 minutes.

Add to the previous stir-fry the selection of vegetables, the chopped green scent, the straw potatoes, the hydrated flour and the remaining coconut milk, and add the flavor with salt and pepper. Mix everything and turn off the heat.

To finish, mount the pirarucu on a baking sheet, alternating layers of pirarucu farofa with banana slices and sliced ​​hard-boiled eggs, and ending with straw potatoes and eggs. If you prefer, you can also put the separate ingredients on the baking sheet.

When it's time to serve, place the pirarucu casserole in the hot oven for 10 minutes, and bon appetit!
